Irish Creme (DIY Baileys)
1 (14 ounce) can sweetened condensed milk
1 ⅔ cups Irish whiskey (Jameson is fantastic, but you can use any whiskey, really I prefer Canadian Club. It’s very cheap and tastes smooth and is what Don Draper drank)
1 cup heavy cream (or Half & Half to make it thinner)
2 tablespoons chocolate syrup
1 teaspoon instant coffee granules (Starbucks Espresso is good)
1 teaspoon vanilla extract
1 teaspoon almond extract
Serve alone with ice or high quality black coffee, such as Peet’s Coffee, Dark Roast Major Dickason’s Blend

This recipe includes caapi – which is more traditional and preferred – but you can alternately use Syrian Rue. Use an old, dedicated coffee grinder to pulverize material, and use pantyhose to aid in straining.
Mimosa Hostilis is not expensive but it laborious to process. As batches can vary wildly in purity, order a test amount of Mimosa Hostilis from a particular vendor at a particular time.
If you get strong results immediately call the vendor and order more, ideally as much as you will need in the next decade, and make sure it’s the same batch from their supplier.
If you have more money than time, you can alternately simply order a large amount and make a small test batch out of it.

Gift idea for this holiday season: Every year my aunt & uncle Hanson from Iowa send us these great Dutch pastries. All-natural ingredients baked onsite in Iowa. Consistency is excellent. We get the Traditionally Dutch Collection. I haven’t tried anything besides the pastries.
Also, Vintage Pyrex (made before 1998) can be used in the oven. Best possible find at Goodwill!
